Kamalaya - Beetroot Tartare with Papaya Dressings


This vibrantly coloured dish has some powerful health benefits. It is rich in nutrients that help protect against heart disease, birth defects, some stress-related disorders and certain cancers, in particular colon and stomach cancer. Ingredients

  • 500g beetroot, whole
  • 10g shallot, chopped
  • 15g thyme, chopped
  • 4 tsp. Dijon mustard
  • 4 tsp. lime juice
  • 250g sea salt (for beetroot bed)
  • A pinch of sea salt
  • Black pepper, to taste
  • 25g fresh basil
  • 40g cucumber, sliced very finely
  • 4tbsp. l papaya dressing
  • 4tbsp. lime & Wasabi Dressing


Method


Preheat the oven to 180 °C. Sprinkle sea salt onto a baking tray, place the beetroot on top and cook it in the oven for 45 minutes. Allow it to cool, then peel and cut it into very fine cubes.

Place the cubed beetroot in a bowl and add the shallots, thyme, Dijon mustard, lime juice, and salt and pepper. Add a tablespoon of each dressing and mix it well.

To serve, place the cucumber slices in a circle on your plates. Use a circular mould to place the Tatare in the middle of the cucumber slices, garnish with the basil leaves and drizzle the remainder of both dressings around the cucumber.
